Robert McPherson, a sommelier, mixologist, and restaurant manager in Miami Beach Fl, shares some delightful pairing ideas. “Classic Cherries Jubilee immediately comes to mind,” he says. “At a resort where I used to work, we would have a station during holiday buffets where it was prepared to order for guests. 

“At the current restaurant that I work at, brandy is added to our Gambas Al Ajillo. In both cases, Korbel is used. Affordable, full-bodied without too much oak influence, which can result in bitterness when reduced.”

For dessert pairings, McPherson recommends, “I always like going with St. Andre Triple Cream—the cheesecake of the cheese world—as a base, while adding a compote made to pair with a brandy of choice. It’s an easy hit.”

He also elaborates on the role of alcohol in cooking: “Alcohol brings roughly 1 1/2 times more in flavor. Think of placing a cinnamon stick in each liquid for a day and what the result would be for flavor?”
